Low Fat Soup Recipes You Can Whip Up Fast

Soup can be a meal by itself.  For people who are weight-conscious, a few healthy ingredients added to soup can spell a whole lot of difference. Here are some nourishing low fat soup recipes smart homemakers or chefs can whip up in a jiffy and serve at home.

Pressed for time? Try preparing chilled cucumber soup with thick, plain nonfat Greek yogurt packed with protein and calcium. You’d have to remove first the seeds from the peeled cucumbers. Chop some onions, and with a little fresh parsley and mint, add to a blender along with the yogurt. Chill and serve.

Other simple to prepare low fat soup recipes are asparagus soup, gazpacho soup, and onion soup. Remove the ends of the asparagus spears. In an oven, cook the asparagus with chopped onion, celery, leeks and sliced potato in a few teaspoons of olive oil. Add vegetable broth, then let the mixture simmer, then put in blender to puree. Transfer to the oven and stir in far-free sour cream for a tasty asparagus soup. For the gazpacho soup, have at hand fresh tomatoes and cucumbers, plus low sodium vegetable juice and virgin olive oil. Mix and chill. Onion soup, on the other hand, may be made with a vegetable based broth. Enjoy the swirl of flavors by stirring in a non-stick pan with butter and olive oil, fresh sage leaves and six cloves of crushed garlic sliced onions, shallots and leeks. Bring to a boil with vegetable stock.

Another tasty option is carrot and sweet potato soup with fat-free, low sodium chicken, vegetable broth and spices. If you’re really pressed for time, purchase quality organic soups such as creamy sweet potato formulated with fresh herbs and delicate seasonings. An alternative is homemade organic butternut soup enriched with vitamins and low in saturated fat and cholesterol.

Low fat soup recipes may be whipped up using ingredients that are full of nutrients, making them ideal for young and old alike.
